But is also useful as an ingredient for thickening soups, especially gazpacho, elevating a sandwich, or making a hummus that will destroy anything you can buy in the store. Chef's Note
When toasting seeds remember to use a low medium heat on a stainless steel pan. Speed is not your friend here. It's better to make a larger batch since a blender will have a hard time "grabbing" small amounts of ingredients. Buy sesame seeds in bulk. They are considerably cheaper in 2lb bags. Where I live 1oz cost about $5, and a 2lb bag will sets me back less than $17. Traditionally, you wouldn't add any oil, but the sesame seeds we can buy here are not fresh enough to release their own oil easily. So a little addition of a neutral oil is needed. You can use olive oil if you prefer, but use a light olive oil, or it will dramatically change the flavor.
